most Irish homes. She is the founder of Ballymaloe,
a successful cookery school in East Cork which she runs with her husband Tim Allen.

Hurrah Christmas is over for yet another year what a relief, even though
Im pretty careful not to overdo the food and drink too seriously, there is
something about this time of year that makes one feel full even before a morsel
of delicious food passes ones lips. Once Little Christmas is over somehow theres
the feeling of anti-climax as we dismantle the Christmas tree, take down the
decorations and burn the holly.
Then comes that sensation of foreboding as we realise that the day of reckoning
is drawing nigh and by the end of January the credit card bills will start to
pour through the letterbox - worse still we really also ought to tackle those
extra pounds weve gained from over-indulgence and shed them again. Even with
the best will in the world, its difficult to get much exercise at present, the
weather is so atrocious one can scarcely venture outside the door, not to speak
of walk or jog.
So despite the roar of the Celtic tiger many of us need to tighten our belts
in every sense of the word, how about a wonderfully comforting winter soup to
soothe and nourish these kinds of soups are a meal in themselves, easy on
the pocket and easy on the waistline!
