Combine Sea Scallops with Summer Produce
A visit to your local fish market is worth a trip to combine summer produce with meaty sea scallops. The key to buying the best scallops is to ask for “dry” scallops that will release very little liquid while cooking and result in a crusty sear. Cook scallops in a hot pan large enough to hold them in a single layer. They are best prepared simply with one of these light sauces. Serve them with Champ, a buttery mix of mashed potato and scallions or chives.
