Ingredients: • 5 medium courgettes
• 1 cup chopped onion
• 1 1/2 teaspoons curry powder
• 3 cups chicken stock
• 1 cup heavy cream
• 1/2 cup milk
• Salt and freshly ground pepper
• Chopped chives for garnish
Wash the courgettes, trim the ends, and cut into 1/2-inch slices. Place
in a saucepan with a lid, add onions, sprinkle with curry powder, add chicken
stock, and bring to a boil. Cover and simmer about 45 minutes. Transfer to a
food processor or blender and process until smooth. Chill until ready to
serve. Stir in cream and milk and season with salt and pepper.
To serve, ladle into soup bowls and sprinkle with chives.
