Ingredients: • 1/2 cup (1 stick) unsalted butter, at room temperature
• 2 ounces Irish blue cheese
• 2 tablespoons minced fresh flat-leaf parsley
• Freshly ground pepper to taste
Directions:
In a small bowl, combine the butter, cheese, parsley, and pepper. Mash with a fork, then stir to blend well. Spoon the butter mixture into a 6-ounce ramekin and cover with plastic wrap. Chill until firm. To serve, place a spoonful of butter on top of tenderloin slices or grilled steaks. Makes 3/4 cup
