Packing Breather
by Aine McCormack

IRISH HERITAGE

CATHOLIC EMANCIPATION
Two huge political issues dominated the Irish political landscape at the turn of the 19th century - the Act of Union and Catholic Emancipation. The former was introduced on January 1st 1801 but would dominate the political agenda for another century. Catholic Emancipation - the granting of full political and religious rights to the majority of the population - was granted much sooner but not before a period of considerable political upheaval

OLD CRAFTS - BESOM MAKING
The Besom Squire
Another country craft was that of besom-making. A besom was a roughly fashioned short-handled sweeping brush which was reserved for use in the hearth area of the kitchen. It was most effective on uneven flag floors, and in more recent times found its way into the garden where it proved a useful gadget for effectively lifting leaves off the lawn!

In a large saucepan over medium heat, melt the butter. Add the onions, shallots, and garlic, and cook for 12 to 15 minutes, or until the onions are soft but not browned. Add the bay leaves, basil, thyme, brown sugar, stock or broth, and stout. Bring to a boil, then reduce heat to low and simmer, covered, for 25 to 30 minutes, or until the onions are tender.
